Earl Grey Tea Cake Earl Grey tea is used as a flavouring for many types of cakes and confectionery, such as chocolates, as well as savoury sauces. For sauces, the flavour is normally created by adding tea bags to the basic stock, boiling for a few minutes and then discarding the bags. Make the cake: In a small pot over medium heat, combine the milk and 2 tablespoons of Earl Grey tea. Bring to a simmer, then remove from the heat, cover, and set aside to steep for at least 30 minutes, up to 1 hour. Strain the steeped milk through a fine-mesh sieve into a medium bowl and discard the tea leaves.

The pound cake batter is pretty basic, but one important tip from Sohla is to create emulsion. It means to make things really well and do it slowly. Inspired by the Clipper event, I decided to create this Blueberry and Lemon Earl Grey Tea Cake for an afternoon tea I hosted a couple of days later. Even though it was the first time I ventured into tea-infused treats, the cake was a total success! I'm absolutely in love with the simplicity and the delicate flavours of this tea-infused dessert.

(There’s poppy seeds in there too – HELlo – but that would make the title even longer than it already is). The loaf cake started out as an idea for a flavour pairing whilst I was drinking a cup of Earl Grey.

What I have here is a modern twist with earl grey tea to enhance the flavor. There are simple vanilla and chocolate pound cakes out there. Why not add a drop of creativity and add some tea flavor? Turns out, a hint of earl grey flavor really raises this pound cake to a whole new level.

Earl Grey Cake with Orange. This Earl Grey Cake with Orange is easy to make and combines the citrus notes of Earl Grey tea with zesty orange. The tea adds a subtle fragrance to what would otherwise be a basic orange loaf cake. I have added an orange drizzle, using orange juice and icing sugar, to make the cake extra moist and flavoursome.
